Location and Origins of the Name “Bai Chay”

Bai Chay is a ward within Ha Long City, Quang Ninh Province, covering an area of 21.02 km² with a population of 30,280 (according to 2019 census data). It is considered the primary tourism center of Ha Long City, located on the western bank of Cua Luc Bay and connected to the city’s economic center, Hon Gai , via the Bai Chay Bridge.

There are many theories regarding the peculiar name “Bai Chay,” but we believe the following explanation to be the most accurate: During the French colonial period, this area was sparsely populated, consisting primarily of forest and sea. Many fishermen would come here to gather dry grass to scorch their wooden boats. The fires used for boat-scorching would often spread, engulfing the entire coastal area, leading locals to call this place “Va Chay” (“va” meaning a patch of coastal land) or “Bai Chay” (Scorched Beach). The name Bai Chay has been used ever since and was formally adopted as an administrative location name during the French occupation of Hon Gai in the late 19th century.

Specialty dishes in Bai Chay

1. Cu Ky Noodle Soup (Bún Cù Kỳ)

Cu Ky Noodle Soup

Cu Ky Noodle Soup

Cu Ky Noodle Soup is a signature delicacy of Quang Ninh, crafted from a unique crustacean known as “Cu Ky.” Often called the “thunder crab” because legend has it that they only release their grip when hearing thunder, these creatures are distinguished by one large claw, one small claw, a brown shell, and striking blue eyes. The broth is exceptionally savory, derived from finely ground Cu Ky bodies. The “rieu” (crab paste) garnish, made from the rich roe of the Cu Ky, offers a vibrant red color and an enticing aroma. The meat from the large claws is extracted carefully, leaving chunks intact on the plate; it is tender, reminiscent of blue crab, yet possesses a distinct, non-greasy flavor profile. A particular highlight is the sheer size of the claws, which makes the dish both substantial and satisfying. The broth features a subtle tang typical of “rieu” style soups, appealing to a wide range of palates. This dish is best enjoyed with pickled bamboo shoots and fresh herbs, creating a refreshing and harmonious culinary experience.

3. Horseshoe Crab (Sam Biển)

Horseshoe Crab

Horseshoe Crab

Horseshoe crabs live in pairs, leading to the local saying “stuck together like horseshoe crabs.” When fishermen head out to sea, they only harvest mated pairs; solitary individuals (known as “so”) are released back into the water, as they may be toxic and unsafe for consumption. The female is generally larger than the male, weighing between 1.5 to 3 kg, while males weigh approximately 1-2 kg. Horseshoe crabs are typically sold by the pair, ranging from 800,000 to 1.5 million VND depending on their size.

The meat of the horseshoe crab is protein-rich and cooling, with a flavor reminiscent of blue crab but with a firmer, milder texture. It is best enjoyed when stir-fried with spicy, aromatic ingredients such as pickled bamboo shoots, garlic, chili, and piper lolot leaves. The roe is exceptionally creamy and is often fried or grilled to be eaten with crispy rice crackers. The legs can be stir-fried in a sweet and sour sauce featuring fish sauce, tamarind, and lemongrass for an extra punch of flavor. Once the roe is extracted, the empty shells are often stuffed with minced meat, aromatics, and lard for a crispy, delicious treat. Finally, the horseshoe crab blood pudding is a local delicacy noted for its unique blue color and delicate, sweet taste.
